Mornings usually start off sunny in rainy season and the clouds hang heavy in the mountains where we live. Gradually they move into the valleys and decide if they will rain or just refresh us with a little mist. So what to do on a day in the clouds?
Today Susie an I headed up to El Santuario at around 4,000 feet to our host’s home, the “Kent Cantina” where Cora and her husband host lunches and dinners with guest chefs from around the world. Today we were treated to the “Long Italian Lunch – Everything Stuffed”. Visiting Italian chefs Vasco Meneguzzo and Flavia Orlando were outstanding in the food preparation and of course the presentation. It was kind of like watching Martha Stewart but you got to eat the delicious food. Click on the pics for a little video.
By the end of the meal, I was the one who was stuffed but what a good time with good friends, good food, good wine, all the things that make Boquete such an enjoyable place to live.
As a fellow foodie, I can tell you that this was a true feast from the Tortellini in Broth (which we learned to make ourselves from scratch) to the end when we had freshly made Sicilian Cannoli stuffed with Ricotta cheese. In between we had Stuffed Peppers, Rolls of Aubergines 0r eggplant and Tuscan Stuffed Tomato Salad all paired with a chilled Lambrusco. Here is a short video on how they made stuffed peppers which were the best I have tasted by the way.
This was one of those days when you have had a great workout at the gym to start the day, negative on the calorie count only to find yourself at a lunch like this where you end the time early afternoon dreaming of a power nap before you head out for the rest of the day. But first we had to have desert, home made Sicilian stuffed Cannoli and here is how that was made.
